[Bronx 1/27/2020 – From the Methods & Techniques Dept.] – Generally, we should not think in terms of substitutions, but only original plant-based dishes, but there are certain procedures where you need to come up with alternative methods and/or product substitutions. Here are some:
Besan & Kala Namak
One good substitution is Besan (Chick Pea Flour) with Black Salt.
I never bought “just egg” and never will. Neither will I buy food that came out of a hen’s butt, the same place as the pee/poo. Aquafaba
The next chapter is Aquafaba, the cooking water from chickpeas, which you can either get from a can, or from cooking chickpeas yourself. For baking this is a really good solution for all the places where you would use egg otherwise.
