This is one lovely documentary, as it combines theory and practice.
The only reservation I would have is his use of too much sugar and salt.
For sweetener, you can use carrots to offset the acidity of tomatoes, or in the worst case, I use either some maple syrup, or some date sugar (which is ground-up dates), or even whole dates.
For salt, there are numerous options, and one good one in veggie dishes is Green Salt, which is salt with an admixture of powder from Salicornia. It is flaverful, and simply reduces your salt intake.
There is a plethora of options to create rich, deep flavor, umami flavor if you will, and still use little salt, and in due course, your palate will change. You are entering a whole new realm of possibilities.
As noted the sugar and salt issue is easily remedied, but overall, this all in one documentary comes highly recommended.
